Cooking Fail

I love cooking Scrambled eggs for me and my sons.  My wife doesn’t eat them, but it’s the only way the 5 year old will eat them. (Yellow Eggs is what he calls them.)  It used to be our Sunday morning ritual, we’d let mom sleep in and wake up and I’d make us Yellow Eggs.

I hate making scrambled eggs with milk.  Creamer makes them so much fluffier, tastier.

But since I haven’t been making coffee at home the last few months, I haven’t bought creamer.

Yesterday we let Mom sleep in and me and the boys had Yellow Eggs.  I was prepping them when I thought I would really like to make them fluffy with creamer, but I didn’t have any.  As I looked in the fridge, a lightbulb went off over my head.  I thought I had a great substitue.  

I thought I was a genius.

Until I tried my eggs.  Blecht!!!

Reddi-Whip does not make a good substitute for Cream.  Even though it is Whipped Cream.  Since it is already fluffy, it will not make your eggs super fluffy.

FAIL!

Second place out of 10 contestants.  Only lost by a few votes.  I am happy, content, I know if my chili was better, it would have won.

I strained the “Oil slick” off the top.

I added the beans, tomatoes and one Red and Green Bell pepper and half an onion.  I like it to have a little crispy flavor to counter the well cooked peppers.

Brought it all to a boil and rushed up to the Chili cookoff.  I was running late and the rules clearly stated we had to be there at 9:00.  

As I pulled into the par\king lot at 9:02, I heard a sound I didn’t want to hear, the lid flying off of my crock pot.  I parked, opened my trunk to a mess.  Part of my chili was on the floor of my trunk.

But when I got to the table, there were only 2 other crocks.  I was #3, the other 7 weren’t there yet.  So much for me worrying.

I left the chili there, went home to clean my car and went back.  I was still in doubt, and then heard some rumblings of how good #3 was.  I started to think I could win.  

Then I sampled all of the others, and not to toot my own horn, but that’s when I got confident.  Some where pretty bad even.

I woke up Saturday morning and I was not happy with the chili.  I thought I had cooked it too long.  Pretty tough when it had to be ready at 9:00 in the morning.

And I wasn’t too happy with the meat.  It did not take in the flavor of the sauce.

After 10 minutes of simmering in the beer, add some beef stock.  

And of course, I added that beautiful Serrano Pepper I showed you earlier.

Now this is going to cook on low for about 3 hours and about midnight I am going to turn it down to simmer for the night, and when I wake up about 7 I will complete the rest.

Mix it all up and let it cook a few minutes.

Add some beer.  I’m going with HopDevil, a local brew here that’s pretty popular. A nice Hoppy IPA.  

When the beer is in, let it cook about 10 minutes.  

The aroma right now is so wonderful.

Meat browned enough, not fully, you want it to cook in the chili sauce.

Spices ready, Cayenne, Chili Powder, Oregano, Cumin, Salt & Pepper.

Remember I told you about the Sausage. Chill it over night, that way I get some nice whole slices.

Throw the fried hots from last night in with the onions and peppers.

Throw some crushed garlic and oil in the pan and cook until just before it turns brown, just to season your pan.

Brown the beef. Now, here’s where my chili seperates from the others.  I don’t use ground beef.  I use cubed beef.  It falls apart and gives nice chunky pieces.
